Sunday begins the Jewish holiday season of Hanukkah.Along with lighting the menorah, many Jewish families will be eating latkes.Friendship Circle is Milwaukee’s largest kosher kitchen.Chava Edelman of Shul Bayside shared her latke recipe with WISN 12.The latke is a crispy, creamy fried potato and onion mixture. Start by shredding potatoes, then puree onions, scallions and eggs.Pour the mixture on top of the shredded potatoes and drain any excess liquid.”The reason that we have latkes on Hanukkah is because over 2,000 years ago, the Jewish people reclaimed the temple, and they wanted to relight their menorah, it was after this long battle many years of oppression and they finally had their freedom,” Edelman said. “They found one jug of oil, and it was only good for one night.”But it lasted eight nights.”That is why we eat the latkes, to remind us of that miracle,” Edelman said. “A lot of people also like to have public festivities of the miracle of Hanukkah just to express how grateful we are for our freedom and to publicize this incredible miracle we have this holiday.”There will be a free Hanukkah festival at “The Yard” at Bayshore on Tuesday at 5 p.m. featuring a menorah lighting, live music and festivities.
